Jim, you don't have to know what your efficiency is to contribute. From
Brett's recipe, your target gravity after the boil is 1.090. So take the
last two digits (90) and multiply it times what your volume of wort will
be in the kettle after the boil. If it's 5.5 gallons then 5.5*90=495.
Now work this backwards to find out what the gravity of the wort will
need to be pre-boil. Your volume will need to be about 6.5 gallons at
the beginning of the boil. Take that 495 number and divide it by 6.5 and
you get 76 or a gravity of 1.076.
Lets say that you didn't get a gravity of 1.076 at the beginning and
it's less than that. You would have two options. Either boil it a little
longer (before adding your first addition of hops) or add some malt
extract. Both have some disadvantages, but still work. Boiling it longer
will end up giving you less volume in the end and adding extract... well
you know how I feel about using extract :)
This may sound more complicated than it really is. Since so many of you
are brewing at the same time, you have plenty of help. Kris's
refractometer will come in handy too. As always, fell free to call me
