Dylan mentioned to me when I did my Hard Lemonade that dropping a couple
bags of green tea in the boil helps stabilize (I think raise) the PH. If you
try to ferment at too low of a PH, apparently the yeast can go nuts and
you'll end up with foam everywhere, and perhaps get some off flavors.
