Sorry I haven't been around and this is so late,but..............yes colder
fluids hold more gas in relation to the liquid. But and I mean but, and hang
with me, liquid can only absorb so much gas so it is not possible to "over
oxy" your wort and cause delayed yeast action. will try and follow up on
article(s) on this. Now the variables, ......temp,and don't forget the size
of the stones being used. the smaller the bubble the easier it is to absorb.
On pitch rates, how much volume was used. could be under pitching? to cold
of wort.
Set up I have used has been the originator and the little red bottle from
home depot or big r, now i use a bottle from norco welding supply.
steps that work for me.......
cool wort to pitching temps through wort chiller, use sanitize wand and
stone and set in fermenter, turn gas on so bubbles just start to flow from
stone. Let is sit why I working around the room, dumping brew pot, mash tun,
pouring another beer.........................shake/swirl fermenter and add
yeast shaking and gassing as i go. sometimes if I'm caught up with cleaning
it may get 2-3 min, and sometimes (opps) has gotten 10 min. with no affect
on has fast or slow lag times were. Yeast counts, temp of wort when ox'd and
pitched has made the biggest difference. Most of my slow (extended lag time
were from under pitching yeast or too cold, or being out of oxy and not
shaking enough to aerate
