Hey Tony!

Glad you could make it to one of our meetings! We also have a website that you should check out. Pictures, logs, calendar, and a forum, which is a great place to ask questions about your beer. There's even an area to talk about whatever you'd like, I think. The website is listed at the bottom of the email in the signature line.

In response to your question about a stuck ferment, I just had one myself, and got it successfuly unstuck using yeast nutrient. Same problem as you, where it never really took off, then got stuck at about 1.030. However, I belive that it was simply a band-aid fix for a lack of aeration prior to pitching the yeast. In your case, you have already gotten about 70% attenuated, which, depending on the yeast, may be all you should expect.

Yeast need to go through an aerobic (oxygenated) phase prior to their anaerobic (no oxygen) phase. Durring this aerobic phase, the yeast build up energy reserves for the next week or so of fermentation. No alcohol is produced during this phase, just CO2 and H2O, and it lasts about 12 hours after the first signs of activity. Once the yeast have decided they have enough energy stored up, they switch to their anaerobic phase and this time CO2 and alcohol are produced. Basically what happens when you get a stuck ferment is that the yeast run out of energy reserves, and go dormant. At this point, you don't want to oxygenate the beer, because it will give it an off flavor, but you can still feed the yeast by giving them yeast nutrient, which is available at pretty much any homebrew shop.

If you feel that your beer really should have a significantly lower final gravity, try the yeast nutrient. However, as I said, at 70% attenuation, if the beer is clear, I'd keg it.

Good luck!

-Ryan
