Tim- I believe that in order to convert the starches in those grains to 
sugar, you need to mash them with something that has a surplus of enzymes 
(2-row, 6-row). Otherwise, you're just extracting flavor and color, not 
fermentable sugar. This is a good read on the subject and it has a chart for
